A New Life Style

I was diagnosed with Celiac Disease when I was 17 years old. I have been living a gluten free life style for 5 years now. It was a very hard thing for me to find out that I could not eat many of my favorite foods anymore. I loved bread, pasta, cookies, muffins, breakfast foods! I loved it all and was depressed that I couldn't have them any more. I wondered for a long time how I was going to live this new lifestyle. I was leaving for college just a few short months after I found out. I was so scared that I wouldn't know what to do, or how to eat. Thanks to a loving mother who is a fantastic cook, over that summer before school we did a lot of research and cooking. We tried all different types of gluten free alternative flours, and different brands. We had a lot of trial and error, which meant playing hockey in the kitchen with a rock hard loaf of bread, and laughing at how awful some things tasted. Because of that we know a lot about the gluten free food market. I have continued to learn how to survive and be happy on this new diet. I have a husband that I want to be happy with my cooking and a future family that might have that same issues as me. Being from Southern California I was used to the large variety of gluten free food stores and restaurants that are available with competitive prices. Now that I am living in Rexburg, in a small town with not very many grocery and health food stores, and even a smaller number of restaurants that offer gluten free food, I have had to do my research. I would like to share the information that I have learned about living gluten free. I want to help those that may have just found out they are now gluten free, or those that have just moved into the area. So I hope you will find my little blog helpful! I am more then willing to answer any questions you have!
